Blog friends, I must apologize, I haven’t posted in ages. Never fear, I’m going to make it up to you… with video. A girlfriend of mine came over the other night and filmed me cooking, and then in an interview about the blog. It’s adorable, horrifying, lisp-y, and me at my very finest… drinking wine in the kitchen whilst whipping up delicious goodies. In lieu of my normal post, I’m just going to provide the recipe… and the video. It speaks for itself :)
Champagne Lollipops
Ingredients:
1.5 C. Pink Sparkling Wine
3 T. Corn Syrup
3/4 C. Sugar
Pinch Salt
12 Lollipop Sticks
Instructions:
-Bring champagne to a low boil and simmer until 1/3 c. of champagne remains
-Remove from heat and set aside to cool
-Once cooled, place the saucepan back on the stove and add the sugar, corn syrup and salt
-Bring mixture to a boil and whisk constantly until a candy thermometer reads about 300 degrees
-In the meantime, grease a lollipop mold so that it is ready
-Pour the hot candy mixture into the lollipop mold and add the sticks while still warm
-Let harden overnight
Oh these are great! I think I’m going to try this for my engagement party!
