Yummy little eggies

You know how people say that you should leave well enough alone?  Well this is an example of a time when those people were wrong.  I’m all for a traditional deviled egg, but sometimes you can make good even better.  The addition of pork products almost always helps achieve near perfection.  Case in point?  Cajun deviled eggs with andouille sausage.  These would look so good on your Thanksgiving table.

Cajun Deviled Eggs

Ingredients:

12 Eggs
1/3 C. Green Bell Pepper, Small Diced
1/3 C. Andouille Sausage, Small Diced
1 t. Olive Oil
1 t. Cajun Seasoning
1/2 t. Salt
1/2 t. Pepper
1/4 C. Mayonnaise
Sprinkle of Cayenne (optional)

This isn’s rocket science, folks… start by hard boiling your eggs.

There are GREENS in this recipe!  Basically health food :)

Also, those pork products that I promised you!

Fry them together with the olive oil until everything is toasty brown and soft.

Next up, add your egg yolks and mix everything together.

Salt and pepper the mix.

And of course, don’t forget that cajun seasoning…  This is also where you could decide to heat things up with a sprinkle of cayenne.

Mayo… so I guess this maybe isn’t exactly a health food…

You COULD scoop the mixture into your egg halves… or you could go the extra mile, pile it into a ziplock bag, cut a corner, and pipe the mixture into your eggs.

Sprinkle a little more cajun seasoning on top and look here, isn’t that pretty?
